Blueberry Blondies recipe

Blueberry Blondies

Description

Deliciously soft and chewy, these Blueberry Blondies combine the richness of brown sugar and butter with bursts of juicy blueberries for a dessert that’s hard to resist.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper for easy removal.
  2. In a mixing bowl, whisk together the melted butter and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and salt. Gradually combine with the wet ingredients.
  5. Carefully fold in the blueberries, being gentle to keep them whole.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before slicing.

Notes

For extra texture, try adding chopped nuts. You can also swap blueberries for other berries like raspberries or strawberries. Store in an airtight container at room temperature for up to 5 days, or freeze for later enjoyment.
