- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
- 1 cup fresh blueberries
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, mix flour, baking powder, salt, and sugar.
- Add cold butter and cut in using fingers or a pastry cutter until coarse crumbs form.
- Slowly stir in the milk just until combined. Do not overmix.
- Carefully fold in the blueberries.
- Turn dough onto a floured surface and gently pat into a 1-inch thick rectangle. Cut out biscuits with a biscuit cutter.
- Place biscuits on a parchment-lined baking sheet. Brush tops with a bit of milk.
- Bake for 12–15 minutes or until tops are golden brown.
Notes
To get that beautiful golden finish, sprinkle some coarse sugar over the biscuits before baking. You can freeze them once cooled for up to 3 months. For variety, try adding lemon zest or swapping in raspberries or chopped strawberries.
