  • 1 lb ground beef (90/10 lean)
  • 1/2 lb ground turkey or chicken (optional)
  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 4 garlic cloves, minced
  • 2 tbsp chili powder (adjust as needed)
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 1/2 cups beef broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto or kidney beans, drained and rinsed

Instructions

  1. Chop the onion and bell pepper, mince the garlic, and rinse the beans.
  2. Heat olive oil in a large pot over medium-high. Add diced onions and bell pepper. Sauté for 5 minutes until soft.
  3. Stir in the garlic and cook for 1 minute more until aromatic.
  4. Add the ground beef and optional turkey/chicken. Brown the meat for 5-7 minutes, breaking it apart as it cooks. Drain any extra fat.
  5. Stir in the tomato paste along with chili powder, cumin, oregano, smoked paprika, cayenne, cocoa, and brown sugar. Let cook for 1-2 minutes to develop flavor.
  6. Pour in diced tomatoes, tomato sauce, and beef broth. Add beans and mix thoroughly.
  7. Bring to a simmer, reduce heat, and let cook uncovered for 25-30 minutes, stirring every so often. Adjust seasoning if needed.

Notes

For thicker chili, cook it a bit longer or reduce the broth. Want more spice? Add jalapeños or more cayenne. This recipe also works well in a slow cooker or Instant Pot!
