- 1 lb ground beef (90/10 lean)
- 1/2 lb ground turkey or chicken (optional)
- 1 tbsp olive oil
- 1 large onion, diced
- 1 bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp chili powder (adjust as needed)
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1 tbsp unsweetened cocoa powder
- 1 tbsp brown sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp tomato paste
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 1/2 cups beef broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto or kidney beans, drained and rinsed
Instructions
- Chop the onion and bell pepper, mince the garlic, and rinse the beans.
- Heat olive oil in a large pot over medium-high. Add diced onions and bell pepper. Sauté for 5 minutes until soft.
- Stir in the garlic and cook for 1 minute more until aromatic.
- Add the ground beef and optional turkey/chicken. Brown the meat for 5-7 minutes, breaking it apart as it cooks. Drain any extra fat.
- Stir in the tomato paste along with chili powder, cumin, oregano, smoked paprika, cayenne, cocoa, and brown sugar. Let cook for 1-2 minutes to develop flavor.
- Pour in diced tomatoes, tomato sauce, and beef broth. Add beans and mix thoroughly.
- Bring to a simmer, reduce heat, and let cook uncovered for 25-30 minutes, stirring every so often. Adjust seasoning if needed.
Notes
For thicker chili, cook it a bit longer or reduce the broth. Want more spice? Add jalapeños or more cayenne. This recipe also works well in a slow cooker or Instant Pot!
