A luscious Banoffee Pie featuring layers of buttery biscuit crust, rich toffee, ripe bananas, and fluffy whipped cream. It’s the kind of dessert that’s as easy to make as it is to devour.

- 200g digestive biscuits (or graham crackers)
- 100g unsalted butter, melted (salted can be used for extra flavor)
- 397g condensed milk
- 3 ripe bananas, sliced
- 300ml heavy whipping cream (whipped to soft peaks)
- Dark chocolate shavings (optional)
Instructions
- Crush the biscuits into fine crumbs using a rolling pin or food processor. Mix with the melted butter until evenly combined.
- Press the biscuit mixture firmly into the base of a pie dish to form an even layer. Chill in the fridge while you prepare the toffee.
- Pour the condensed milk into a saucepan and gently heat while stirring constantly for 5-7 minutes, until golden and thickened. Remove from heat and allow to cool slightly.
- Spread the cooled toffee over the biscuit base. Arrange banana slices on top, covering the surface completely.
- Whip the cream until soft peaks form, then spread or pipe it over the bananas. Top with dark chocolate shavings, if using.
- Chill the pie in the refrigerator for at least 2 hours before serving to allow it to set.
Notes
You can add a layer of peanut butter or Nutella between the toffee and bananas for a delicious twist. Store-bought caramel can also be used to save time. For best results, refrigerate the pie long enough for the layers to set properly.
