- 4 boneless, skinless chicken breasts (or substitute with thighs)
- 1 bunch fresh asparagus, trimmed
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey (or maple syrup)
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Whisk together balsamic vinegar, olive oil, honey, and minced garlic in a small bowl to create your marinade.
- Place chicken in a shallow dish and pour the marinade over it. Let marinate for at least 30 minutes or up to 2 hours for best flavor.
- Preheat oven to 400°F (200°C). Arrange the marinated chicken in a baking dish and pour remaining marinade over top.
- Roast chicken for 20 minutes. Then add the trimmed asparagus to the dish, tossing them in the pan juices.
- Continue roasting for another 15-20 minutes, or until chicken is cooked through and asparagus is tender-crisp. Chicken should reach an internal temperature of 165°F (75°C).
- Garnish with chopped basil or parsley and serve warm. For a complete meal, pair with brown rice or quinoa.
