Description

This baked ranch chicken delivers all the cozy, herby flavor you love in an easy weeknight dinner. It’s crunchy, savory, and loaded with ranch-seasoned goodness the whole family will ask for again and again.


Ingredients

  • 46 boneless, skinless chicken breasts (about 2 lbs) – thighs can be used for extra flavor
  • 1 packet (1 oz) ranch seasoning mix – homemade works too
  • 1 cup breadcrumbs – panko recommended for more crunch
  • 1/2 cup grated Parmesan cheese – or nutritional yeast for dairy-free option
  • 1/4 cup olive oil – melted butter can be substituted
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) for even cooking throughout.
  2. Pat chicken breasts dry with paper towels and season lightly with salt and pepper.
  3. In a bowl, mix ranch seasoning, breadcrumbs, and Parmesan. In a separate bowl, add olive oil.
  4. Dip chicken in oil, let excess drip off, then coat fully in breadcrumb mixture.
  5. Place on a greased baking sheet. Bake 25–30 minutes, or until chicken reaches 165°F (74°C) internally.
  6. Allow to rest 5 minutes before slicing and serving to retain juiciness.

Notes

Add red pepper flakes to the coating if you want a bit of heat. Toss veggies like zucchini or bell peppers around the chicken on the sheet for an easy one-pan meal. Leftovers work great in wraps, pasta salad, or sandwiches.
