- 2 pounds medium shrimp, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- Zest of 1 lemon

- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, lemon juice, zest, salt, and pepper.
- Place shrimp in a large bowl and coat evenly with the garlic-lemon mixture.
- Arrange shrimp on a parchment-lined baking sheet.
- Bake for 10–12 minutes or until shrimp are pink and opaque.
- Sprinkle with chopped parsley and serve hot.
Notes
For extra flavor, marinate the shrimp in the garlic-lemon mixture for 30 minutes before baking. Add a pinch of red pepper flakes if you enjoy a little heat. Store leftovers in the fridge for up to 2 days — they’re great in pasta or salads!
