Ingredients

  • 2 pounds medium shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, lemon juice, zest, salt, and pepper.
  3. Place shrimp in a large bowl and coat evenly with the garlic-lemon mixture.
  4. Arrange shrimp on a parchment-lined baking sheet.
  5. Bake for 10–12 minutes or until shrimp are pink and opaque.
  6. Sprinkle with chopped parsley and serve hot.

Notes

For extra flavor, marinate the shrimp in the garlic-lemon mixture for 30 minutes before baking. Add a pinch of red pepper flakes if you enjoy a little heat. Store leftovers in the fridge for up to 2 days — they’re great in pasta or salads!
