Description

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs for a richer flavor)
  • 200g crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 large zucchini, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) to get that delicious roast going.
  2. Place the chicken breasts in a baking dish and drizzle them with olive oil to keep them juicy.
  3. Sprinkle dried oregano, salt, and pepper over the chicken. Add the halved cherry tomatoes and zucchini slices around the chicken.
  4. Top everything with crumbled feta, spreading it out evenly for that signature crispiness.
  5. Bake for 30-35 minutes, or until the chicken is thoroughly cooked and the feta is lightly golden. Make sure to slice through one piece to check for doneness.
  6. Garnish with fresh basil just before serving to add a fresh pop of flavor.

Notes
