Description

Soft, fluffy, and bursting with juicy blueberries, these baked blueberry donuts are a delightful way to brighten up your morning. With a touch of vanilla and a tender crumb, they’re an irresistible treat without the extra oil from frying.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or thawed frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine the buttermilk, egg, melted butter, and vanilla. Gently stir in the blueberries.
  4. Add the wet ingredients to the dry and stir just until blended. Don’t over-mix.
  5. Spoon the batter into the donut pan, filling each mold about 2/3 full. Bake for 12–15 minutes or until golden and a toothpick comes out clean.
  6. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use thawed and drained frozen blueberries if fresh aren’t available. Avoid over-mixing to keep the donuts light and tender. These freeze well, just store in an airtight container.
