- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries (or thawed frozen)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla. Gently stir in the blueberries.
- Add the wet ingredients to the dry and stir just until blended. Don’t over-mix.
- Spoon the batter into the donut pan, filling each mold about 2/3 full. Bake for 12–15 minutes or until golden and a toothpick comes out clean.
- Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use thawed and drained frozen blueberries if fresh aren’t available. Avoid over-mixing to keep the donuts light and tender. These freeze well, just store in an airtight container.
