- 8 ounces fideo noodles (or thin spaghetti/vermicelli/angel hair pasta, broken into small pieces)
- 2 ripe tomatoes, cored and halved
- 1 medium onion, finely chopped (about 1 cup)
- 4 garlic cloves, peeled
- 2 teaspoons ground cumin
- 4 to 6 cups chicken broth, depending on desired consistency
- ½ teaspoon salt, or to taste
- 1 tablespoon fresh lime juice
- Chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Blend tomatoes, chopped onion, garlic cloves, and cumin until smooth and set aside.
- In a large pot, heat oil over medium heat. Add noodles and toast until golden brown, about 4–5 minutes, stirring constantly.
- Pour the blended tomato mixture into the pot, stirring to coat the noodles evenly.
- Add 4 cups of chicken broth and salt. Bring to a gentle boil, then reduce to a simmer and cook uncovered for 10–12 minutes, stirring occasionally.
- If needed, add more broth to achieve desired consistency.
- Stir in lime juice and adjust seasoning to taste.
- Serve hot, garnished with cilantro and lime wedges on the side.
Notes
For extra depth of flavor, use homemade chicken broth. Toasting the noodles is key for authentic taste. Add veggies or shredded chicken for a heartier version.
