- 2 pounds baby potatoes (or regular potatoes cut into chunks)
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano (or 1 teaspoon dried)
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, whisk together olive oil, garlic, oregano, lemon juice, salt, and pepper.
- Add potatoes and toss to coat them thoroughly in the marinade.
- Spread the potatoes evenly on a baking sheet in a single layer.
- Roast for 45 minutes, turning halfway, until golden and fork-tender.
- Remove from oven and sprinkle with fresh parsley before serving.
Notes
Avoid crowding the baking sheet to let the potatoes roast rather than steam. Add red pepper flakes if you like a spicy kick. Rosemary or thyme can be swapped for oregano for a different twist. Leftovers keep well in the fridge for 3 days and reheat beautifully in the oven.
