Description

Ingredients

  • 4 cups fresh apricots (10 to 12 apricots, halved and pitted; substitute with peaches if desired)
  • 1 cup granulated sugar (adjust based on apricot sweetness)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or almond milk for dairy-free)
  • 1/2 cup butter, melted (plus extra for greasing)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. In a large bowl, toss apricots with 1/2 cup sugar and a pinch of cinnamon; let sit 15 minutes.
  3. In another bowl, mix flour, remaining sugar, baking powder, and salt. Stir in milk and melted butter until smooth.
  4. Pour batter into baking dish, then top evenly with apricot mixture. Sprinkle extra cinnamon over the top.
  5. Bake 40–45 minutes until golden brown and bubbly. Serve warm.

Notes

For variety, mix apricots with other fruits like cherries or blueberries. Store leftovers in the fridge for up to 3 days and reheat in the oven for best texture.
