- 4 cups fresh apricots (10 to 12 apricots, halved and pitted; substitute with peaches if desired)
- 1 cup granulated sugar (adjust based on apricot sweetness)
- 1 cup all-purpose flour (or gluten-free flour)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk (or almond milk for dairy-free)
- 1/2 cup butter, melted (plus extra for greasing)
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
- In a large bowl, toss apricots with 1/2 cup sugar and a pinch of cinnamon; let sit 15 minutes.
- In another bowl, mix flour, remaining sugar, baking powder, and salt. Stir in milk and melted butter until smooth.
- Pour batter into baking dish, then top evenly with apricot mixture. Sprinkle extra cinnamon over the top.
- Bake 40–45 minutes until golden brown and bubbly. Serve warm.
Notes
For variety, mix apricots with other fruits like cherries or blueberries. Store leftovers in the fridge for up to 3 days and reheat in the oven for best texture.
