- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cups mixed vegetables (frozen or fresh)
- 1 can (15 oz) diced tomatoes, drained
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups cooked egg noodles (or your choice of pasta)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef or turkey with diced onion over medium heat until browned. Drain excess fat and stir in mixed vegetables, garlic powder, salt, and pepper.
- Add drained tomatoes and cream of mushroom soup. Mix well, then fold in the cooked egg noodles.
- Transfer to a greased 9×13-inch baking dish and top with shredded cheddar cheese.
- Bake for 25–30 minutes, until cheese is melted and golden.
Notes
You can prepare this dish a day in advance and refrigerate until ready to bake. Try red pepper flakes for a spicy twist or swap cream of mushroom for cream of chicken as a flavorful alternative.
