Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped almonds
  • 1/2 cup chocolate chips, plus more for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, and cocoa powder.
  3. In a separate bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until just combined.
  5. Gradually fold in the dry ingredients until no flour remains.
  6. Stir in chopped almonds and chocolate chips.
  7. Scoop dough onto a lined baking sheet, spacing about 2 inches apart, and top with extra chocolate chips.
  8. Bake for 10-12 minutes, until edges are set and centers are still soft.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra crunch, add a tablespoon of almond meal to the dough. You can freeze these cookies in an airtight container for up to a month. Feel free to swap the chocolate chips with white chocolate or butterscotch for a fun twist.
