Description

A legendary salad born in Florida’s oldest Spanish restaurant, combining Cuban and Spanish flavors with Swiss cheese, ham, olives, and a bold garlic vinaigrette.


Ingredients

  • 1 head iceberg lettuce, torn by hand
  • 1 ½ cups Swiss cheese, julienned or cubed
  • 1 ½ cups ham (or turkey/chicken), julienned or cubed
  • ½ cup green olives stuffed with pimentos, sliced
  • 1 cup artichoke hearts, chopped
  • ¼ cup Parmesan or Romano cheese, grated
  • 1 cup grape tomatoes, halved
  • ½ cup olive oil
  • 4 cloves garlic, minced
  • 2 tbsp white vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Remove the core of the iceberg lettuce and tear into bite-sized pieces. Place in a large salad bowl.
  2. Add grape tomatoes, artichoke hearts, green olives, Swiss cheese, and ham. Top with Parmesan or Romano cheese.
  3. In a jar, combine olive oil, garlic, vinegar, lemon juice, Worcestershire sauce, oregano, salt, and pepper. Shake well until blended.
  4. Pour the dressing over the salad and toss thoroughly to coat all ingredients.
  5. Serve immediately for the freshest flavor and best texture.

Notes

Feel free to substitute Swiss cheese with provolone or cheddar, and ham with chickpeas or tofu for a vegetarian twist. Best enjoyed fresh but dressing can be made ahead.
