Description
A legendary salad born in Florida’s oldest Spanish restaurant, combining Cuban and Spanish flavors with Swiss cheese, ham, olives, and a bold garlic vinaigrette.
Ingredients

- 1 head iceberg lettuce, torn by hand
- 1 ½ cups Swiss cheese, julienned or cubed
- 1 ½ cups ham (or turkey/chicken), julienned or cubed
- ½ cup green olives stuffed with pimentos, sliced
- 1 cup artichoke hearts, chopped
- ¼ cup Parmesan or Romano cheese, grated
- 1 cup grape tomatoes, halved
- ½ cup olive oil
- 4 cloves garlic, minced
- 2 tbsp white vinegar
- 2 tbsp fresh lemon juice
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Remove the core of the iceberg lettuce and tear into bite-sized pieces. Place in a large salad bowl.
- Add grape tomatoes, artichoke hearts, green olives, Swiss cheese, and ham. Top with Parmesan or Romano cheese.
- In a jar, combine olive oil, garlic, vinegar, lemon juice, Worcestershire sauce, oregano, salt, and pepper. Shake well until blended.
- Pour the dressing over the salad and toss thoroughly to coat all ingredients.
- Serve immediately for the freshest flavor and best texture.
Notes
Feel free to substitute Swiss cheese with provolone or cheddar, and ham with chickpeas or tofu for a vegetarian twist. Best enjoyed fresh but dressing can be made ahead.
